There’s a reason why plants do this – it involves the Fibonacci sequence, the golden angle, and the efficient packing of growing cells.  This partially understand information comes to you via the chapter ‘The Magic of Numbers’ in the book The Magical Maze: Seeing the World Through Mathematical Eyes by Ian Stewart.

(I saw this photo, remembered I’d read an explanation for why plants do this, went to the shelf, pulled out the book and there it all was.  I love my book collection!)
